Citrus Smoked Chicken Recipe
Over the past few weeks I've tried to find the right meal to cook for me and my wife. She has been on a real health kick as of late, and I was looking for a way to support her while still being able to eat something tasty that I would like.
There is a grilled chicken that she likes at one of our favorite local restaurants, so I decided to try and imitate it, and the Citrus Smoked Chicken is the closest recipe I could find, and she absolutely loved it. So I've decided to share the recipe here. ~ ENJOY
Ingredients
1 (6 pound) whole chicken
4 cups lemon-lime flavored carbonated beverage
1 tablespoon garlic powder
2 cups wood chips, soaked
Directions
1. Place the whole chicken into a large resealable plastic bag. Sprinkle in garlic powder, then pour in enough lemon-lime soda to cover the bird. Seal the bag, and place in the refrigerator overnight to marinate.
2. Light charcoal in an outdoor smoker, and wait until the temperature is at 225 degrees F (110 degrees C).
3. Remove chicken from the bag, and place on the grill grate. Discard marinade. Cover, and cook for 10 hours. Occasionally toss a handful of soaked wood chips on the coals.
